Catering and food services: operation of school campus cafeterias and the staff restaurant of the Cantonal Administration of the Canton of Schwyz

Hochbauamt Kanton Schwyz is consolidating fragmented catering contracts and in-house operations under one external operator, taking over school and administration food services in stages and centralising production at Kaltbach.

Deliverables

Operate around 10 sites, including the Kaltbach central kitchen, for about 1,200 meals daily.

Contract

The fixed-price evaluation compares the cumulative cantonal contribution over the fixed contract term.

Eligibility

Require CHF 15 Mio. annual catering turnover, ISO 9001 or equivalent, HACCP, CHF 10 Mio. liability cover and both site visits.

Award

Price weighs 40%; operating and phasing concept 30%, sustainability 10%, references 8%, presentation 12%.

Watch out

A CHF 10’000 penalty per case or delay day applies to specified breaches, capped at 10% of affected sites’ annual turnover.
